About Us

I’m Adam.

I’m passionate about everything I do. I seek to bring an artistic beauty to my work and sourdough bread has become one of my favorite expressions of creativity. In my bakery, I can dance with the living organisms that breathe flavor and texture into a symphony of crispy yet tender, sweet with a tang, and healthful deliciousness.

I believe in the tried and true, traditional old ways. I seek to connect to the traditions of our ancestors and do everything the “long, short way”. 

My bread is long fermented, largely breaking down the gluten prior to baking. The natural yeast and bacteria produce a nutrient dense bread that nourishes body and neshama. 

The flour is locally grown and stone-ground on granite millstones in Trumansburg, NY.

My dream is to mill myself before baking when we grow into a larger space.

We currently deliver only in Rockland County and can arrange pick-up if requested in advance.

Delivery is 2-6pm on Friday. Early delivery on Thursday night is sometimes available by request.
