Our focaccia, plain — just olive oil and salt.
Naturally leavened (no Yeast added).
An 86% hydration dough, baked in extra virgin olive oil and finished with nothing but Mediterranean sea salt. The bare version, for people who want the crumb to do the talking.

Open and airy inside. Crisp and golden where the oil meets the pan.

Best, sourdough Focaccia I've ever had. Hands down. Amazing with spices but without is a great option for the Shabbis table where you have dips. Or if using as a sandwich bread.
