Our Honey Whole Grain, with Ceylon cinnamon and Deglet Noor dates laminated through it.

Naturally leavened (no Yeast added).

Ceylon is the true cinnamon — delicate and floral, not the hot bark most people know. The dates go soft and jammy in the bake; you will find them in ribbons through the crumb. Underneath it all, local Farmer Ground grains — sifted wheat, sifted spelt, whole spelt, whole wheat and whole rye — sweet and nutty, enriched with honey.

Bilkelach are small enough for one hand — crust all the way around, tender inside. The half boule is proofed in a small round banneton. Toast it. Butter it. Try to leave some for the seudah.

Crust & crumb
Crisp thin crust. Moist, tender crumb, honey forward.
