Our stone-ground whole grain, turned toward the new year.

Naturally leavened (no Yeast added).

Local grains from Farmer Ground in Trumansburg, NY — sifted wheat, sifted spelt, whole spelt, whole wheat and whole rye — already sweet and nutty on their own, now enriched with honey. Bakes a shade darker and a shade sweeter; the honey comes forward.

Bilkelach are small enough for one hand — crust all the way around, tender inside. The half boule is proofed in a small round banneton.

Crust & crumb
Crisp thin crust. Moist, tender crumb, honey forward.

Filtered water, stone-ground sifted wheat flour*, sifted spelt flour*, whole spelt flour*, stone-ground whole wheat flour*, honey*, stone-ground whole rye flour*, Mediterranean sea salt, and love.
